It is up and running. It really is an amazing piece of machinery. We are now offering three bubbly wines:
- 2020 Lodi Effervescent Symphony (the Symphony varietal w/ 3.5% RS)
- 2020 Lodi Effervescent White Wine with Natural Peach Flavoring
- Non-Vintage California Effervescent Brut White Wine (blend of Pinot Gris & Viognier)
- 2019 Lodi Effervescent Rose Wine (White Zinfandel w/ 4% RS)
- Non-Vintage Lodi Effervescent White Wine with Natural Lime Flavoring

*At this time we are infusing the wine with carbon dioxide to make it effervescent. The TTB classifies sparkling and carbonated wine as a wine that measures .392g/100ml. Our wines with using this method are .37-.385g/100ml which is underneath that threshold. (The wines are still quite carbonated.) Because our wines falls beneath the TTB standard the taxes are cheaper since they are in the still wine tax class. Also, the labels would be filed and approved (through us/Steve Zmak as usual) under still wine and you can use a fanciful name to put on the label. The fanciful name can not include “sparkling or bubbly” but plenty of other words can be used like effervescence to help your customers recognize that it is sparkling wine (though the package: bottle, cork, and wire hood give it away as well). From what we are reading carbonated drinks are one of the fastest growing segments in the beverage industry. We still have no minimum order.
